One of the oldest known spices, Cinnamon is indigenous to Sri
Lanka. Once introduced to Kerala’s sandy soil and humid
tropical climate, the bark of the Cinnamomum Verum tree
produced a delicately fragrant aroma and warm sweet flavour
unlike any other. Cinnamon oil is used to cure processed meat,
especially chicken & lamb dishes. The antimicrobial property
increased the shelf life of food.
